In Spain this sort of lettuce is very popular. It is known as "Cogollos de Tudela" and traditionally grown in the municipality of Navarra Tudela around the banks of Ebro River.
This type of Lettuce has a bitter taste, stronger than the common lettuce. They are found almost exclusively in the market as a fresh product, being used mainly in salads.
This lettuce is usually served sliced lengthwise into two or four pieces, and dressed with vinaigrette. Feature prominently on celebrations menus and served in many Spanish restaurants as a starting dish.
INGREDIENTS for 2 people:
- 4 Little Gem Lettuces.
- 1 full Garlic (Chopped).
- Common Salt or Salt Flakes.
- Extra Virgin Olive Oil.
- 2 Tablespoons of Sherry Vinegar or Red Wine Vinegar.
STEP 1 - Get the Letucce Hearts ready... |
STEP 2 - Cut the Letucces lengthwise into halves and then cut each half into halves as seen in the picture. |
STEP 3 - Wash them thoroughly and shake off excess of water. |
STEP 4 - Get a pan ready and turn the hove off to high heat. |
STEP 5 - Add enough Olive Oil into the pan to cover the bottom of it. |
STEP 6 - Saute the Chopped Garlic in a pan with Oil until golden. |
STEP 7 - Turn the hove off and then add 2 tablespoons of Sherry Vinegar and mix it all very well. |
STEP 8 - Place the halves of Lettuce on the plate, so that the stem is facing inwards and hence can be gripped easily. Then, sprinkle the Garlic with the Oil on top of the Lettuce halves... |
STEP 9 - ...and sprinkle a bit of Salt to taste. It is very rich if served immediately while still warm. Please enjoy this delicious Salad. |
