Hello again my dear friends and blog readers. Today's recipe is a another very easy to make dish; a full of flavours, colorful and refreshing salad made with chicory, pomegranate, fried garlic in Olive Oil, Sherry Vinegar and Salt.
Honestly, I have no idea of the origin of this salad but a lot of people eat this type of salad in Spain and also use escarole lettuce in stead of chicory. Definetly, this is a salad for those who likes an explosion of strong flavours due to the mixture of the bitterness of chicory, mixed along with the sourness and sweetness of pomegranate, sherry vinegar, garlic and a hint of salt. This is a perfect salad for summer time, but also can be eaten at any other season. I hope you all enjoy this salad as much as I do.
INGREDIENTS for 2 people.
- 2 Chicories.
- 1 full Pomegranate.
- Olive Oil.
- Sherry Vinegar.
- 4 cloves of Garlic (Sliced)
- Salt.
1 Pomegranate and 2 Chicories. |
STEP 1 - Cut into 1 cms slices. |
STEP 2 - Wash and drain the Chicories into a strainer and discard the water. |
STEP 3 - Place the Chicories in a big bowl so you will be able to mix with rest of ingredients properly. |
STEP 4 - Get the pomegranate ready to open and... |
STEP 5 - ...place all the Pomegranate seeds into a bowl.
STEP 6 - Add the Pomegranate seeds into the chicories containing bowl. |
STEP 7 - And mix them up very well. |
STEP 8 - Get the Garlic cut into slices. |
STEP 9 - In a pan add enough Olive Oil to cover the bottom of the pan.
STEP 11 - Then add the fried Garlic along with the oil into the salad and mix very well. |
STEP 12 & 13 - Place the whole salad into a big dish and add salt to taste. |
